How much should we prepare for confinement?
It depends on the intended duration and the product line. Tell us the expected duration and we will work out the weight, the per-gram cost and current availability. Order one to two months ahead — higher grades often need reserving.
How should it be stored during confinement?
Sealed, dark, cool and dry, with a completely dry spoon. Do not refrigerate — the temperature change condenses moisture inside the container. Confinement kitchens run humid, so keep it away from the stove and the cupboard above the sink.
